The natural spectacle ice wine Pillitteri Estates Winery prides itself on producing one of nature’s most exquisite gifts – ice wine. Icewine grapes are harvested when temperatures reach -8 degrees Celsius or colder. The hand-picked, naturally frozen grapes, when pressed, produce a juice with an intense concentration of sugars, acids, flavors and aromas. However, the yield is much lower than most wines, requiring ten times more grapes per bottle. The resulting wine has a high natural sugar content, low alcohol content, amazing acidity and is intensely sweet and flavorful.
